Daiquiri Pie
8 ounces cream cheese, softened
One 14-ounce can sweetened condensed
milk
(such as Eagle Brand)
1 tablespoon grated lime zest
1/2 cup fresh lime juice
1/3 cup light rum
One 9-inch graham cracker crumb crust
1 tablespoon light rum
1 cup whipping cream
1 tablespoon confectioner's sugar
1 teaspoon grated lime zest
for garnish
Beat cream cheese until smooth and fluffy. Gradually add condensed
milk, beating until well blended. Add 1 tablespoon grated lime zest, lime
juice and 1/3
cup light rum; mix well. Pour mixture into 9-inch graham
cracker crust. Refrigerate 3 to 4
hours or overnight. Gradually add 1 tablespoon light rum to whipping cream with
confectioner's sugar and
beat until stiff. Spread over pie, sprinkle with 1 teaspoon
grated lime
zest. Yum, yum, yum!
