Mammy’s Chocolate Kiss Cookies

These cookies were high on the list of my childhood favorites. I had
forgotten about them until recently when I was fantasizing about
baking cookies with my (then) almost-four-year-old granddaughter!
Too good not to pass along...

1 cup butter (2 sticks)
1/2 cup sugar
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 cup finely chopped pecans or walnuts
One (6 ounce) bag chocolate kisses
Powdered sugar (optional)

In a large mixing bowl cream the butter, sugar and vanilla until the mixture
is light and fluffy. With mixer at low speed, add the flour and mix just to combine. Stir in the chopped walnuts.
Cover and refrigerate the dough until it is firm enough to handle easily,
about 2 hours (can refrigerate overnight).
Preheat the oven to 375 degrees F. Unwrap the chocolate kisses and shape about 1 tablespoon of the cookie dough around each one. Be sure that the chocolate is covered completely.
Place the cookies on an ungreased cookie sheet and bake 10 to 12 minutes.
If desired, roll the cookies in powdered sugar while they are still warm.
Makes about 3 dozen yummy cookies!
