Gigi’s Chocolate
Pecan Pie Bars

cups flour
1/4
cup sugar
1/2
teaspoon baking powder
1/2
teaspoon cinnamon
1/2
cup (1 stick) butter
1
cup finely chopped pecans
1/4
cup (1/2 stick) butter
1
ounce semisweet chocolate
3
beaten eggs
1 1/4
cups packed brown sugar
2
tablespoons bourbon
1
teaspoon vanilla extract
In
a mixing bowl stir together flour, sugar, baking powder and cinnamon. Cut in 1/2 cup butter until mixture resembled coarse meal. Stir in pecans. Press into bottom of ungreased 13-by-9-by-2-inch pan.
Bake 10 minutes at 350 degrees F.
Meanwhile,
in a small saucepan, combine 1/4 cup butter and the chocolate. Heat and stir over heat until chocolate is melted.
In a small mixing bowl combine eggs, brown sugar, bourbon and
vanilla. Add chocolate mixture.
Stir mixture until well-blended; pour over crust. Return to oven. Bake 20
minutes more, or until set. Cool
on wire rack. Cut into 36 bars.
