Captain Midnight Muffins

2 cups rolled oats
2 cups crumbled Shredded Wheat
2 cups All Bran
1 cup boiling water
1 cup canola oil
1 pound brown sugar
4 cups (1 quart) buttermilk
4 eggs, beaten
5 cups flour
5 teaspoons baking soda
1 teaspoon salt (or less)

Dump the oats, wheat and bran into a large bowl. Pour the boiling water over all, then add the oil, sugar and buttermilk. Add the eggs (and, yes, you can use a substitute like Second Nature for all or part of your eggs). Dump in the flour, soda and salt and mix. Fill oiled muffin tins and bake in a preheated 400-degree F. oven about 20 minutes, or until a toothpick comes out clean. Cover any leftover batter and refrigerate. It will keep for about a month and should furnish you with about four dozen [normal size] muffins.
