Chef Keegan's
Favorite Cranberry Bread

2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup unsalted butter
1 egg, beaten
1 teaspoon grated orange zest
3/4 cup orange juice
2 cups fresh or frozen cranberries, chopped

Into a large bowl sift together flour, sugar, baking powder, salt and soda.
Cut in the butter until the mixture is crumbly. Add egg, orange zest and orange juice all at once. Stir just until the mixture is evenly moist. Fold
in the cranberries. Spoon the batter into a greased 9x5x3-inch loaf pan.
Bake at 350 degrees F. for 1 hour and 10 minutes, or until toothpick
comes out clean. Remove from pan and cool on wire rack.
