Baked Prawns with Garlic and Herbs
Bon Appetit Archives

1/2 cup olive oil
1/2 cup dry vermouth
1/3 cup fresh lemon juice
1/4 cup minced fresh parsley
4 garlic cloves, minced
1 1/2 teaspoons dried oregano
24 large prawns, peeled and deveined, tails left intact
Salt and freshly ground pepper

Combine olive oil, vermouth, lemon juice, parsley, garlic and oregano in a medium saucepan and bring to boil over medium-high heat, stirring frequently. Remove from heat. Taste and season with salt and pepper.
Let cool.
Arrange prawns in a single layer in baking dish. Pour vermouth mixture
over prawns. Let marinate at room temperature 1 hour. Preheat oven to 375 degrees F. Bake prawns, basting once or twice, until pink and translucent, about 15 to 20 minutes. Serves 4.
