Uncooked Nectarine Compote
with Cinnamon Ice Milk
Bon Appetit June 1988

Ice Milk:
4 large egg yolks
3/4 cup sugar
2 teaspoons cinnamon
4 cups milk
2 teaspoons vanilla extract

Compote:
1/3 cup firmly packed light brown sugar
1/4 cup dark rum
2 tablespoons fresh lemon juice
6 cups sliced nectarines (about 8 large)
1 cup fresh blueberries

For ice milk: Blend egg yolks, sugar and cinnamon in medium bowl. Bring milk to boil in heavy medium saucepan over medium heat. Gradually whisk hot milk into yolk mixture. Reduce heat to low. Return mixture to saucepan and whisk until mixture thickens slightly, about 6 minutes; do not boil. Strain into bowl. Stir in vanilla. Cool. Cover and refrigerate until well chilled. (Can be prepared 1 day ahead.) Freeze in an ice cream maker according to the manufacturer's directions. Freeze in covered container several hours to mellow flavors. (Can be prepared 1 day ahead.)
For compote
: Blend brown sugar, rum and lemon juice in large bowl. Mix
in nectarines. Cover and refrigerate 1 hour. Soften ice milk slightly in refrigerator. Spoon nectarines into shallow bowls. Top with scoops of ice milk. Sprinkle with blueberries. Serve immediately. Serves 8.
