Sesame Vegetables
Gourmet February 1996

This is one of my very favorite vegetable stir-fry recipes. I can't resist adding garlic and toasted sesame seeds to it. And of course, you can turn it into a main dish so easily by adding beef, chicken, fish, pork or seafood to it. Otherwise, serve it with Garlic Soy Chicken...

1 tablespoon vegetable oil
1 medium red bell pepper, cut into thin strips
4 ounces white mushrooms, trimmed and quartered
4 scallions, root end and dark green parts discarded,
cut crosswise into 1 1/2-inch pieces
1 pinch dried hot red pepper flakes
1 teaspoon Asian sesame oil, or to taste

In a heavy skillet heat vegetable oil over moderate heat until hot but not smoking and cook bell pepper, mushrooms, scallions and red pepper flakes, stirring, until vegetables are golden and cooked through, about 5 minutes. Toss vegetables with sesame oil and salt and pepper to taste. Serves 2.
