Gigi’s Pork Chop Dinner

6 center-cut pork chops
Salt and freshly ground pepper (or Creole seasoning) to taste
Olive oil
1/2 teaspoon dried savory leaves, crushed
1 bay leaf
2 cups vegetable juice, such as V-8
1/2 cup chicken broth
1 small cabbage, cut into wedges
6 carrots, cut into 1-inch slices
1 large onion, chopped
2 cloves garlic, minced
3 medium potatoes, peeled and quartered

Season the pork chops with salt and pepper or Creole seasoning. Brown the chops in olive oil in a large skillet over moderately high heat. Add the savory, bay leaf, vegetable juice and chicken broth. Cover, reduce heat to low and simmer 30 minutes. Add the cabbage, carrots, onion, garlic and potatoes.  Cover and simmer 35 minutes or until the vegetables are tender. Serves 6.
