Angie's Italian Pork Chops

6 lean pork chops
1/3 cup olive oil
Juice of 1 lemon
2 garlic cloves, minced
Salt and pepper to taste
1 egg beaten lightly with 1 tablespoon water
1 1/4 cups fine dry breadcrumbs with Italian seasoning
1/3 cup grated Parmesan cheese
2 tablespoon finely chopped parsley
2 tablespoons butter
2 tablespoons olive oil

Marinate pork chops in a mixture of olive oil. lemon juice, and garlic, for about 2 hours. Drain the chops and pat them dry with paper towels. Season the chops with salt and pepper to taste. Dip the chops in the egg-water mixture and coat them on both sides with a mixture of the breadcrumbs, Parmesan cheese and parsley.
In a skillet brown the chops in butter and olive oil. Cover the skillet and bake the chops in a 325-degree F. oven 25 to 30 minutes or until they re tender when tested with a fork.
